Bourbon and Caturra varietals from La Concordia in Chiapas, washed with a 20-hour fermentation rest that builds complexity. Orange zest and panela sweetness open the cup, with caramel and chocolate developing as it cools. Bright citric acidity balanced by a round, creamy body. From the 2024–2025 harvest.

The Origin

La Concordia is a municipality in the central highlands of Chiapas where coffee and cloud forest coexist. The 20-hour fermentation protocol used here — resting the depulped cherry before washing — is a deliberate choice that adds depth without the funky edges of extended fermentation. European-prep grading (screen 17+, max 12 defects per 300g) means only the best beans make it into the bag.
