Carlos was born and raised in Chiapas and learned roasting from his grandfather. He brings sensory-driven adjustments and small-batch precision to every personalized blend.

He uses a notation system to capture roast and flavor cues, allowing him to iterate and refine flavors across shipments according to customer feedback.
The Chiapas Collective is a network of small family farms in the highlands of Chiapas. They cultivate beans using traditional, low-impact farming methods that produce complex and distinctive flavors.
Working directly with the collective allows us to source lots that highlight brightness, chocolate, and floral notes—giving our roasters the raw materials they need to craft personalized blends.
