Oaxaca's coffee tradition runs deep into Zapotec and Mixtec communities that have cultivated shade-grown coffee for over a century. The Cañada region — rugged highland at 1,200–1,500 meters where small farms of half a hectare to three hectares grow Typica, Bourbon, and Mundo Novo varieties — is the heart of this blend.
