The Sierra Madre de Chiapas, from the historic estates around Tapachula — including farms like Finca Hamburgo, founded in 1888 — to the highlands near San Cristóbal, produces coffee that regularly competes at the top of Mexico's specialty scene. This blend draws from farms growing at 1,200 to 1,800 meters, where cool nights slow cherry development and concentrate sugars. GXG roasts it medium to preserve the altitude character that makes Chiapas coffee distinctive.
