The Sierra de Nayarit provides altitude and Pacific moisture, while the natural processing tradition here produces fruit-forward cups that challenge expectations of what Mexican coffee can taste like. Farms in the Xalisco municipality grow at 1,000 to 1,400 meters, where the combination of tropical humidity and mountain coolness creates ideal conditions for natural processing - drying the whole cherry around the bean to produce intense fruit character and honey sweetness.
